Does anyone here have any idea how I can run a second or third stream from shoutcast?

You must run multiple instances on different ports.

Do I do that by adding ports to the configuration file?

no you will create a new configuration file for each port and then start each instance with each configuration file. You can also just install SHOUTcast more then once in different locations to get the same effect.
